Ingredients

  • Tortilla (1, large-size)
  • Tortilla (1, small-size)
  • Oyster mushrooms (2 mushrooms, king size)
  • Vegan mayonnaise (2 tsp)
  • Paprika (0.5 tsp)
  • Hot sauce (2 tsp)
  • Olive oil / Sunflower oil (2 tsp)
  • Garlic (1 large clove)
  • Sweet corn (0.3 cup)
  • Lettuce (2 leaves)
  • Tomato (3 cherries)

Ingredients for Ranch Sauce

  • Lemon juice (1 tsp)
  • Parsley (2 tbsp, chopped)
  • Onion powder (1 tsp)
  • Yogurt (Vegan, 0.5 cup)
  • Oregano (1.5 tsp)
  • Garlic (Fresh or powder, 1 tsp)
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms thoroughly with a damp cloth.
  2. Use a fork to scrape and chop them.
  3. Heat a pan and add 2 tablespoons of oil.
  4. Sauté the mushrooms until they are golden brown.
  5. Transfer the sautéed mushrooms to a large mixing bowl.
  6. Drizzle 2 teaspoons of hot sauce over the mushrooms.
  7. Add vegan mayo, garlic, paprika, and a pinch of salt to the warm mushrooms and stir well.
  8. For the ranch sauce, in a medium mixing bowl, add half a cup of vegan yogurt and give it a quick whisk.
  9. Incorporate garlic, onion powder, salt, pepper, lemon juice, finely chopped parsley, and oregano. Mix thoroughly.
  10. Your ranch dip is now ready.
  11. Use a cutting board to assemble the wraps.
  12. Lay a large tortilla flat on the surface.
  13. Spread 2-3 teaspoons of ranch sauce over the tortilla.
  14. Arrange the sautéed mushrooms on top of the ranch sauce.
  15. Add corn over the mushrooms.
  16. Sprinkle finely chopped lettuce and cherry tomatoes over the top.
  17. Place a small tortilla with the ingredients in the center of the large tortilla.
  18. Fold the edges of the large tortilla over the small one to form a round-shaped wrap.
  19. Grill the wrap on both sides until it turns brown.
