Ingredients

  • 6 boneless skinless chicken thighs
  • 1 cup chicken bone broth (homemade or store-bought)
  • 1 (8 ounces) package cream cheese (softened)
  • 1 tbsp poultry seasoning
  • 1 tsp ground black pepper
  • Fresh herbs of your choice such as thyme to garnish our dish
  • Melted unsalted butter for drizzling (maybe vegan butter or ghee if preferred)

Instructions

Step 1:

Place your 6 boneless chicken thighs in a 4-quart crockpot or slow cooker. 

Step 2:

Using a blender, combine your chicken broth, softened cream cheese, poultry seasoning, and black pepper and mix until smooth. 

Step 3:

Add your blended mixture to your crockpot or slow cooker and cover.

Cook your chicken on low for about 6 hours or until you see your chicken start to fall apart and can be shredded easily.

Step 4:

Transfer your chicken to a plate and using two forks shred your chicken until all done and put back in the gravy sauce.

Check if the chicken needs any salt, and add if desired.

Serve your shredded chicken with gravy along with some mashed potatoes, or grilled veggies for a healthier alternative or cauliflower mash if you follow a dairy-free diet with a lot of gravy on top from the crockpot.

Let thaw overnight and can be reheated in a baking dish on a preheated oven at 350 F for about 5 minutes or until it’s warmed through.

  1. Lay your chicken thighs evenly in the crockpot or slow cooker but even cooking, even when seasoning them. 
  2. An easier way to shred your chicken is to use a hand electric mixer. It works wonders!
