Ingredients

  • 1 large red onion (diced)
  • 2 large tomatoes (diced)
  • 2 limes
  • 1 red bell pepper (diced)
  • 1 bunch of parsley
  • 1 cup of cooked corn
  • Half a cup of red beans
  • 2-3 leaves of lettuce
  • 1 tbsp. mustard
  • 1 tbsp. apple cider vinegar
  • Lime juice (optional)
  • 2 garlic cloves
  • 3 tbsp. olive oil
  • 1 cup of walnuts (chopped)
  • 1 cup of black lentils
  • 2 tsp. chipotle sauce
  • 2 tbsp. guacamole
  • 4 tbsp. brown rice
  • Tortilla chips (As much as you want, for decoration)
  • Cumin to taste
  • Salt to taste
  • Oregano taste
  • Chili pepper / Chipotle pepper
  • Maple syrup (As much as you want)
  • 1/2 jalapeno pepper

Instructions

  1. Finely dice over half the onion, 1 red bell pepper, and 1 tomato.
  2. Chop the parsley.
  3. Cut 1 lime in half.
  4. Add cooked corn and put it all in a deep bowl.
  5. Add the beans to it. Squeeze the lime.
  6. Add salt and mix gently. Put it aside.
  7. Slice the lettuce lengthwise as you would for a salad.
  8. Get a small jar with a lid.
  9. Put 1 tablespoon of mustard in it.
  10. Then add maple syrup, the juice of half a lime, olive oil, apple cider vinegar, and cumin.
  11. Now close the lid of the jar and shake it. It will look like a cream.
  12. Add this to your lettuce salad and gently mix the salad.
  13. Put this lettuce salad on the bean and cooked corn salad.
  14. Get a pan and start preheating.
  15. Add some olive oil and start sautéing the 2 cloves of garlic you crushed.
  16. When the garlic’s color changes a little, add chopped walnuts and fry for 5 minutes.
  17. Add the lentils, then add the chopped tomatoes and chili pepper.
  18. Add oregano and cumin and sauté some more.
  19. Add chipotle sauce and salt and mix gently.
  20. To continue cooking, turn down the heat after boiling and let it simmer.
  21. Turn off the heat and add the lentil mixture to the other ingredients in the deep bowl.
  22. To make guacamole, chop the remaining red onion, parsley, and jalapeno pepper.
  23. Cut an avocado in half. Remove the core and make cube-shaped cuts.
  24. If you have chosen a ripe and lovely avocado, you can easily remove it from the skin with a tablespoon.
  25. Put all the ingredients in a new bowl and add 1 lime juice to it.
  26. After adding salt, grind it well and mix it into a puree.
  27. Make small balls from the guacamole puree. Decorate the bowl with these balls. Put boiled brown rice on one side. Add tortilla chips to the other side. That’s all. Bon appetite!
