Spinach (7 ounces / 200g)

Mung beans (3 tsp)

Cucumber (1 small)

Cherry tomato (5 cherries)

Strawberry (5 medium)

Apple (Green, 1 apple)

Celery leaf (2 tsp)

Fresh basil leaf (2 tsp)

Fresh parsley (2 tsp)

Fresh Mint (2 tsp)

Orange Dressing

Olive oil (3 tsp)

Freshly squeezed orange juice (2 fl oz)

Sugar (1/2 tsp)

Recipe – 20min prep / 25min cooking time

To prepare the mung beans, put them in a saucepan.

Add enough water to get over it.

Boil the beans for 20 minutes.

Drain the boiled beans and keep them aside to cool.

Clean the strawberries well and cut them into four parts.

Finely dice the apple.

Chop the cucumbers into cubes.

Wash and dry the spinach thoroughly, then place them in the salad bowl.

Recommendation: Make sure you wash and dry all vegetables very well.

Add strawberries and apples on top of baby spinach.

Roughly chop the mint, celery leaves, parsley, and basil and add them to the salad bowl.

Now you can prepare the dressing:

Squeeze the orange juice and put 2 fl oz of orange juice in a bowl.

Add sugar to it.

Finally, add the olive oil gradually and mix the dressing until it gets a thick consistency.
