Ingredients

  • 3 tablespoons of olive oil
  • 1 tablespoon of butter
  • 1 medium white cabbage
  • 1 medium onion
  • 1 medium carrot
  • 1 tablespoon of flour
  • 1/2 teaspoon of hot pepper paste
  • 5 cups of hot chicken stock (or hot drinking water)
  • 1 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1/4 bunch of dill (for serving)

Instructions

    Step 1

    To prepare cabbage soup, take the hard root part of the cabbage you cut in half. Wash in plenty of water and drain the excess water. Finely chop it with the help of a sharp knife.

    Step 2

    Cut the peeled onion into small cubes and grate the carrot with a large part of the grater. Finely chop the dill to add it to the soup.

    Step 3

    Heat the olive oil and butter in a deep saucepan. Saute the chopped onions until their freshness is gone. Add the flour and hot pepper paste and fry for a short time over low heat.

    Step 4

    When the smell of flour emerges, add the hot chicken broth and mix it with a whisk to get a smooth consistency. Add the grated carrots and finely chopped white cabbage and boil over medium heat.

    Step 5

    When it starts to boil, sweeten it with salt and freshly ground black pepper. Take the soup you cooked for 30 minutes from the stove and let it rest for 10 minutes.
