Ingredients

  • 4 chicken breasts
  • 3 garlic cloves (minced)
  • 1 large chopped onion
  • 6 cups chicken broth
  • 2 medium tomatoes (peeled and chopped)
  • 1 cup heavy cream
  • 1 cup yellow cheddar cheese (shredded)
  • 1/2 cup white cheddar cheese (shredded)
  • 1 cup black beans

Spices

  • 2 tbsp. cumin
  • 1 tbsp. chili powder
  • 1 tbsp. paprika
  • Salt and pepper to taste

To Garnish the Soup Bowl

  • Tortilla chips
  • 2 cherry tomatoes (chopped for each bowl)
  • 1 tbsp. cilantro (chopped for each bowl)
  • 1 tbsp. sour cream (for each bowl)

Instructions

  1. Put the chicken breasts in the slow cooker.
  2. Add onions, minced garlic, spices, and mix well.
  3. Add chicken broth and cook on high for 3 hours.
  4. At the end of the 3 hours, take the chicken breast out, shred them using two forks and put them back in the slow cooker.
  5. Add tomatoes and black beans.
  6. Mix gently.
  7. Add heavy cream, all the cheese, and mix gently.
  8. Cook on high for additional 45 more minutes.
  9. Share the soup in bowls, and optionally garnish them with tortilla chips and sour cream.
