Huevos Rancheros is an indispensable dish filled with these incredible flavors and appeals to low-calorie dieters or vegetarians.

Ingredients

  • 3 eggs
  • 3 tablespoons of extra virgin olive oil
  • 1 15 ounces can diced tomatoes
  • 2 medium-size potatoes
  • 1/2 onion
  • 3 cloves garlic
  • 1/2 teaspoon of sweet smoked paprika
  • Sea salt
  • Black pepper for taste
  • A handful of fresh chives

Instructions

  1. You can start by washing the potatoes and then drying them well. This washing and drying are important as we will process the potatoes without peeling them. To chop them, start by cutting them in half down the middle.
  2. After getting 4 equal parts, take a quarter and chop it into 9 pieces. Then, they are ready to be put into a large, deep salad bowl. Drizzle olive oil over the chopped potatoes and add salt and black pepper.
  3. Mix everything well by shaking it. Now, preheat the oven to 250 degrees Celsius. Meanwhile, place the potatoes on a baking tray lined with parchment paper and roast them in the preheated oven.
    While the potatoes are in the oven, you can start preparing your other ingredients. Mince the garlic, then chop the onions finely. Put them aside. Meanwhile, preheat a pan and add 2 tablespoons of olive oil.
  4. Add the onions and then the garlic to the pan and fry over medium heat, mixing frequently to prevent the garlic from burning. When the onions start to turn golden, add paprika, and if desired, hot paprika, and mix well.
  5. Add the tomatoes and any other seasoning you like, then salt and pepper, and mix. Lower the flame and let the mixture simmer.
    When the mixture boils, the baking time for your potatoes should be complete. Add the roasted potatoes to the boiling mixture and continue to mix gently until the sauce covers all the potatoes.
  6. Now, we will add the eggs to this mixture, but this addition will be a little different from what we normally do:
    Bring 3 eggs in 3 small bowls. Break each egg into a separate bowl without whisking, keeping the yolks and whites untouched. Transfer these eggs to 3 parts of the pan far from each other while the potato mixture continues to cook.
  7. Cover the lid and continue cooking until the eggs are cooked, about 5 more minutes.
    Remove the cooked Huevos Rancheros from the heat. Now, garnish it by chopping fresh chives and sprinkling them on top. You can also add scallions or parsley instead of chives, or even mix and add all three if you wish.
  8. Don't forget to add sea salt and pepper to the eggs either before or after garnishing.

Ingredient Notes

Corn tortillas, not flour, are traditional. Look for tortillas made with only masa harina, water, and lime (Mi Rancho and Guerrero are widely available good picks). Pasture-raised eggs give the deepest yellow yolks; Vital Farms and Kirkland Organic are reliable.

For the sauce, use fresh Roma tomatoes when they are in season; canned fire-roasted tomatoes work year-round. One or two jalapenos for a moderate heat; use serranos if you want more punch or remove the seeds and ribs to tone it down. Black beans are the classic; pinto beans also work.

Fresh cilantro, lime, and a small amount of queso fresco or feta at the finish complete the plate. For a vegan version, skip the eggs and use a spiced tofu scramble.

Tips and Variations

Char 4 Roma tomatoes, 1 jalapeno, 2 garlic cloves (unpeeled), and 1/2 white onion in a dry cast-iron skillet over medium-high heat for 8 to 10 minutes, turning until blackened in spots. Peel the garlic, then blend everything with a small handful of cilantro, salt, and a squeeze of lime.

Cook 2 tablespoons oil in a pan, add the sauce, and simmer 5 minutes. Warm the tortillas over a gas flame for 20 seconds per side. Fry 2 eggs per plate sunny-side up in 1 teaspoon oil.

Plate: 2 warm tortillas, spoonful of black beans, sauce ladled over, eggs on top, garnish with cilantro, crumbled feta, and lime wedges. For a lower-carb version, use 1 tortilla per plate and add more beans. For a higher-protein version, add crumbled chorizo (regular or soy) to the beans.

For a truly authentic Mexican breakfast, add a side of refried beans and a small mound of Mexican-style rice. Skip cheese entirely for a lighter plate.

Storage and Reheating

Ranchero sauce keeps in a sealed container in the fridge for 5 days and improves overnight. Freeze the sauce in 1-cup portions for 3 months. Do not assemble ahead; the tortillas turn soggy within an hour. Fry the eggs fresh each time. Warm reheated sauce in a small pan over low heat for 3 minutes.
