Ingredients: 12 servings

1 Large avocado (1 1/2 to 2 cups flesh)

2 1/2 cups unsweetened almond milk

1/4 to 1/3 cup monk fruit granulated sweetener

2 tbsp unsweetened cocoa powder

Preparation: Prep time 10 mins (freezing time 4+ hours or more as desired)

Step 1:

Using a blender, combine the avocado, unsweetened almond milk, monk fruit sweetener, and unsweetened cocoa powder. Blend all the ingredients on medium-high until the mixture becomes smooth and creamy-like.

Tip: If you prefer the creamier version of this popsicle, you may use an ice cream maker and churn it for 4 to 5 minutes. Once done, you can serve it when set or transfer it to the freezer to freeze.

Step 2:

Divide your fudge popsicle mixture into the popsicle molds. Transfer your fudge popsicles to the freezer and freeze them for 4 to 6 hours or until they are solid.

Tip: It is very important when the popsicles are ready not to let them sit at room temperature and thaw out.

Run them under hot water for a few seconds and remove them from the mold quickly. And Voila!… Bon Appetit.
