Store of Vitamins: Almond Broccoli Soup Recipe

We accept that broccoli is not a vegetable used with pleasure in meals. It is not widely accepted. One of the reasons for this was that it was boiled and presented to us for many years.

For this reason, we got a little bit worse with broccoli, which we had been eating this way for years as if there was no other choice but to be boiled.

It was a period in which we lived as a society. But then we realized what irresistible tastes could be made with it. It became the best accompaniment to beef and chicken, then it came across as an incredible risotto. We realized that we were going to have it in a wide variety of versions.

After all these combinations, we tried a version of the broccoli soup, which we had heard a lot about, which is not so new but has a different taste. We wanted to deliver it to you as quickly as possible.

This soup has a place in all diets. Is this possible? With a few changes, yes, it’s possible!

Ingredients

  • Broccoli (500g/50 florets)
  • Sliced almonds (1 1/2 ounces + 1 tbsp / 50g)
  • Yellow onion (1 medium)
  • Potatoes (1 medium)
  • Carrot (1 medium)
  • Olive oil (1 tbsp)
  • Heavy cream (3 1/2 fl oz) – Skip this if it’s for a vegan diet
  • Water (27 fl oz)

Instructions

  1. Peel the onion and chop it coarsely. Preheat a medium saucepan, then add olive oil. Fry the chopped onions.
  2. Chop the potatoes, broccoli, and carrots and add them to the onions. Fry them together. Add the water, salt, and pepper. Cook until the vegetables are soft. Blend the soup in a food processor until the vegetables are completely tender.
  3. Return the soup to the pot and let it boil once. In a separate pan, heat 1 tbsp of olive oil. Add sliced almonds to the heated olive oil and fry.
  4. Divide the soup into bowls and pour the fried almonds over each serving. Finally, use some heavy cream as a topping.

Notes

  • Keep the lid closed until the vegetables are tender.
  • Preheat the pan before adding the olive oil.
