Broccoli (500g/50 florets)
Sliced almonds (1 1/2 ounces + 1 tbsp / 50g)
Yellow onion (1 medium)
Potatoes (1 medium)
Carrot (1 medium)
Olive oil (1 tbsp)
Heavy cream (3 1/2 fl oz) – Skip this if it’s for a vegan diet
Water (27 fl oz)

Recipe – 45min prep/35min cooking time
Peel the onion and chop it coarsely.
Preheat a medium saucepan.
Then add olive oil.
Fry the chopped onions.
Chop the potatoes, broccoli, and carrots, add them to the onions, and fry them all together.
Add the water.
Add salt and pepper.
Cook until the vegetables are soft.
Tip: Keep the lid closed until the vegetables are tender.
Mix the soup in the food processor when the vegetables are completely tender.
