Ingredients
- Broccoli (500g/50 florets)
- Sliced almonds (1 1/2 ounces + 1 tbsp / 50g)
- Yellow onion (1 medium)
- Potatoes (1 medium)
- Carrot (1 medium)
- Olive oil (1 tbsp)
- Heavy cream (3 1/2 fl oz) – Skip this if it’s for a vegan diet
- Water (27 fl oz)
Instructions
Step 1
Peel the onion and chop it coarsely. Preheat a medium saucepan. Then add olive oil. Fry the chopped onions.
Step 2
Chop the potatoes, broccoli, and carrots, add them to the onions, and fry them all together. Add the water. Add salt and pepper. Cook until the vegetables are soft. Mix the soup in the food processor when the vegetables are completely tender.
Step 3
Then take the soup back to the pot. Let it boil once. Put 1 tbsp of olive oil in a pan and heat it. Add sliced almonds to 1 tbsp olive oil and fry.
Step 4
Divide the soup into bowls and pour the fried almonds over the soup. Finally, use some heavy cream as a topping.

- Keep the lid closed until the vegetables are tender.
- Preheat the pan before adding the olive oil to the pan.
- Make sure you chop all the vegetables the same size. So they will cook at the same time.
- Instead of roasting the ingredients one by one, you can boil them all in water.
