Ingredients

  • 1 lbs. broccoli
  • 1 3/4 ounces of sliced almonds
  • 1 medium yellow onion
  • 1 medium potatoe
  • 1 medium carrot
  • 1 tbsp. olive oil
  • 3 1/2 fl. oz. heavy cream (skip this if it’s for a vegan diet)
  • 27 fl. oz. water

Instructions

  1. Peel the onion and chop it coarsely. Preheat a medium saucepan, then add olive oil. Fry the chopped onions.
  2. Chop the potatoes, broccoli, and carrots and add them to the onions. Fry them together. Add the water, salt, and pepper. Cook until the vegetables are soft. Blend the soup in a food processor until the vegetables are completely tender.
  3. Return the soup to the pot and let it boil once. In a separate pan, heat 1 tbsp of olive oil. Add sliced almonds to the heated olive oil and fry.
  4. Divide the soup into bowls and pour the fried almonds over each serving. Finally, use some heavy cream as a topping.

Notes

  • Keep the lid closed until the vegetables are tender.
  • Preheat the pan before adding the olive oil.
  • Ensure all the vegetables are chopped to the same size so they will cook simultaneously.
  • Instead of roasting the ingredients individually, you can boil them all in water.
