Recipe – 15min prep / 35min cooking time

Place a large pot on the stove.

Turn on the stove and add 13 1/2 oz or 1.6 cups of Greek yogurt, 1 1/2 tbsp of flour, and 2 tbsp of lemon juice to the pot.

Blend until you get a smooth consistency.

Recommendation: Use strained Greek yogurt for the best consistency and taste. You can buy strained Greek yogurt or make it at home. It is quite easy to make. Put a few tablespoons of Greek yogurt in a paper towel-lined strainer. Place a container under the strainer, so water does not flow to your fridge. Leave it in the refrigerator for a few hours.

Add the yolk of 1 egg to the pot, then mix again.

Add 6 cups of water.

Tip: Make sure that the water you add is cold.

Then cook it on medium heat.

Wash and drain 6.5 tbsp of raw rice thoroughly.

After the soup starts to boil, add the rice and let it boil a little more.

Preheat a medium skillet.

Then add 2 tbsp butter and 2 tbsp olive oil to the skillet.

Once the oils have melted and warmed up, mix dried mint and chili flakes.

Pour the prepared spicy oil over the soup.

Finally, add salt.

Let it boil for a short while, and remove it from the heat.

Recommendation: The hot version of this soup is even better. If you’re a hot lover, you can slice a fresh chili pepper and add it to the soup while it is still boiling.
