It is a delicious combination of Greek yogurt, couscous, and raw zucchini. Perfect for the whole family, because this salad is a clever way to get kids to eat zucchini.

Ingredients

  • 1/2 cup couscous (cooked)
  • 1 cup Greek yogurt
  • 2 tbsp. mayo
  • 1 zucchini (small)
  • 2 garlic cloves
  • Salt to taste

Instructions

  1. Boil water in a large pan.
  2. Add couscous and boil for 10 minutes.
  3. Drain the couscous.
  4. Transfer the couscous to a bowl.
  5. Thoroughly wash and dry a small-sized zucchini, then grate it into the bowl.
  6. Add Greek yogurt and mayo.
  7. Add crushed garlic cloves.
  8. Add salt and mix all the ingredients.
  9. Cover the bowl, place it in the fridge, and let it rest for at least half an hour.
