Ingredients
Unsweetened peanut butter (6 tbsp)
Dark chocolate, min 80% cocoa (6 square/50g)
Cocoa powder (2 1/2 tbsp)
Keto sweetener (1 tbsp) – Optional
Butter (7 tbsp)
Cinnamon (1/2 tsp)
Recipe – 40min prep time
Take the butter in a large bowl.
Tip: The butter should be at room temperature, so it should be soft. If it is in the refrigerator, take it out of the refrigerator for at least 2-3 hours before you start preparing it.
After taking the room temperature butter in a bowl, add the unsweetened peanut butter to it.
Add only 2 tbsp cocoa to it.
Then add cinnamon powder.
Now mix the ingredients well with a spoon.
Note: The butter being soft was important for this step. If your butter is hard, the ingredients will not be fully combined and you will not be able to mix.
If you are now sure that you have mixed the mortar well, cover it and let it sit in the refrigerator for 1 hour.
Take out the mixture, which you have kept in the refrigerator for an hour, and take one tablespoon from it and give it an oval shape.
Keep making oval balls until the mixture runs out.
Recommendation: You can get help from 2 tablespoons to give this shape. Take a little bit out of the mortar with one tablespoon and shape it by rolling it with the other. You can also do it by hand if you wish.
Put the keto peanut butter balls in the freezer and let them sit for 1 more hour.
Melt dark chocolate using a double boiler for 15 minutes before taking the balls out of the freezer.
Tip: Use a deep bowl when melting chocolates. Because we will dip the peanut butter balls one by one in this melted chocolate and ensure that the melted chocolate is smeared all over it.
Take the balls out of the freezer and dip them one by one into the melted chocolate.
Place the dipped balls on a plate with some gaps between them.
There is a final freezing stage, but it is very short. We will do this so that the balls become extra crispy.
Now keep the balls you have placed on the plate in the freezer for another 15 minutes.
After 15 minutes, take the keto peanut butter balls out of the freezer and sprinkle them with the remaining 1/2 tbsp cocoa powder.
Tip: If you want more cocoa, you can sprinkle more.
