To avoid breaking the keto diet you are following, make sure to stick to the ingredient list and avoid adding extra ingredients. Now, follow the step-by-step guide to learn how to make intense chocolate keto peanut butter balls.

Ingredients

  • Unsweetened peanut butter (6 tbsp)
  • Dark chocolate, min 80% cocoa (6 square/50g)
  • Cocoa powder (2 1/2 tbsp)
  • Keto sweetener (1 tbsp) – Optional
  • Butter (7 tbsp)
  • Cinnamon (1/2 tsp)

Instructions

  1. Take the butter in a large bowl. Mix in the unsweetened peanut butter after adding the room-temperature butter to the bowl.
  2. Add only 2 tbsp of cocoa to the mixture, followed by cinnamon powder.
  3. Now, thoroughly mix the ingredients with a spoon.
  4. Once you are confident that the mixture is well combined, cover it and let it sit in the refrigerator for 1 hour.
  5. After an hour, remove the mixture from the refrigerator and scoop out one tablespoon at a time, shaping each portion into an oval ball.
  6. Continue shaping oval balls until all of the mixture is used.
  7. Place the keto peanut butter balls in the freezer and let them sit for 1 hour.
  8. While the balls are chilling, melt dark chocolate using a double boiler for 15 minutes.
  9. After the balls have been in the freezer for 1 hour, remove them and dip each into the melted chocolate.
  10. Place the dipped balls on a plate with some space between them.
  11. For the final freezing stage, keep the plate of balls in the freezer for another 15 minutes.
  12. After 15 minutes, remove the keto peanut butter balls from the freezer and sprinkle them with the remaining 1/2 tbsp of cocoa powder.

Notes

  • The butter should be at room temperature, so it should be soft. If it is in the refrigerator, take it out at least 2-3 hours before starting the preparation. If your butter is hard, the ingredients will not fully combine, and you will not be able to mix them properly.
  • You can use 2 tablespoons to shape the mixture. Take a small portion of the mixture with one tablespoon and shape it by rolling it with the other. Alternatively, you can shape it by hand if you prefer.
  • When melting chocolates, use a deep bowl. We will dip the peanut butter balls one by one into the melted chocolate to ensure they are fully coated.
