Ingredients

  • Lamb liver (1 pound)
  • Potato (2, medium)
  • Red onion (1, medium)
  • All-purpose flour (3 1/2 tbsp)
  • Baking soda (1/2 tsp)
  • Sumac (1/2 tsp)
  • Coriander (1/2 tsp)
  • Cumin (1/2 tsp)
  • Fresh parsley (1/2 bunch)
  • Paprika (1/2 tsp)
  • Oil to fry
  • Salt

Instructions

  1. To start preparation, remove the membranes on the liver. The livers can be hard if you don’t do this step.
  2. Take the thoroughly cleaned livers into a mixing bowl.
  3. Add baking soda, salt, and flour.
  4. Then, mix and strain the excess flour with the help of a strainer.
  5. Peel the potatoes and cut them the same size (cubes) as the liver.
  6. Heat the oil in a deep frying pan.
  7. Fry the potatoes first, and keep them aside.
  8. Then, add clean frying oil to a clean pan and heat it.
  9. Put the liver in heated oil and fry.
  10. When the liver starts to cook, add paprika and ground coriander.
  11. After cooking, drain the excess oil and transfer it to a plate.
  12. Put the potatoes and liver on the same plate.
  13. Dice the red onions.
  14. Add some salt and sumac to the onions and rub them well.
  15. Finally, after adding the chopped parsley to the onions, mix it well and add it to the bowl with the livers and potatoes.
  16. Gently mix all the ingredients.
