Ingredients

  • Chickpeas (1 cup, boiled) – Soak the chickpeas in 1 cup of water the night before, and do not throw away the soaked water.
  • Pumpkin (1.5 cups, cut into small cubes, try not to mash at first)
  • Olive oil (5 tbsp)
  • Tahini (4 tbsp)
  • Lemon juice (use the juice of 1 medium lemon)
  • Cumin and salt
  • Pumpkin seeds (1 tbsp)
  • Paprika

Instructions

  1. Here's the step-by-step pumpkin hummus recipe to learn how to make this delicacy:
  2. Place the chickpeas in a large bowl, add enough water to cover, and soak overnight. To start preparation, separate 1/2 cup of the soaked water. Drain the chickpeas and remove the skins as much as possible.
  3. Chop the pumpkins into cubes. Boil the pumpkins until they become soft, drain the water, and set aside the small cubes.
  4. Put 1/2 cup of the chickpea water in the blender, then add tahini, lemon juice, chickpeas, 3 tbsp olive oil, cumin, salt, and boiled pumpkins. Blend until you get a smooth consistency.
  5. Take the hummus and spread it on a plate, smoothing it out with a spoon. Make a hole in the middle (not too deep).
  6. Stuff small pumpkins into the hole. Sprinkle a few chickpeas if you wish, and then sprinkle 1 tbsp pumpkin seeds.
  7. Drizzle 2 tbsp olive oil over the hummus. Garnish with paprika and cumin.
  8. Cut the tortilla into triangles and fry in well-heated oil for 20-30 seconds.
  9. Arrange the crispy tortillas around the edges of the hummus.
  10. Enjoy your delicious pumpkin hummus with crispy tortilla triangles!

Notes

Chop some of the pumpkins into extra smaller cubes for hummus topping and keep them aside.
