Total Time 15 minutes

For Cookie Dough

  • Almond flour (3.3 ounces)
  • Maple syrup (2 fl oz)
  • Almond butter (3 tablespoons)
  • Chocolate chips (2 tablespoons, vegan)
  • Vanilla (1 teaspoon)
  • Salt (a pinch)

For Ice Cream

  • Banana (4 medium, frozen)
  • Vanilla protein powder (Half of a scoop, vegan)
  • Peanut butter (1 tablespoon)
  • Vanilla (about the tip of a teaspoon)
  • Plant-based milk (2 tablespoons)

Step 1 – Make the Cookie Dough

Let’s start by making the cookie dough.

So that our ice cream does not melt when cookies need to rest.

Put 3.3 ounces of almond flour into a blender.

Add 3 tablespoons of almond butter to it.

Finally, add 2 fl-oz maple syrup and 1 teaspoon vanilla.

Mix them well.

Take the dough to a bowl.

Add chocolate chips to it and mix gently with a spoon.

Then take pieces of the dough the size of a hazelnut and roll them.

Continue the same process until you have no dough left.

Put the cookies in the refrigerator and then go ahead to make the ice cream.

Step 2 – Make the Ice Cream

Put 4 frozen bananas in the blender.

Add 1 tablespoon of peanut butter to it.

Then add half a scoop of protein powder.

Recommendation: You can optionally add some cinnamon at this stage. This improves the taste. Those who don’t like it can skip this recommendation.

Mix for a short time.

Then add 2 tablespoons of plant-based milk and continue mixing.

Continue mixing until you get an ice cream texture.

Step 3 – Combine

Take the ice cream in a mixing bowl or you can use the blender jar instead.

Add half of the cookie dough to it and mix gently with a spoon.

Divide the ice cream with cookie dough into serving bowls.

Use the remaining cookie dough as toppings.

Finally, sprinkle some more vegan chocolate chips.

Freeze bananas after slicing for the best results.

Bottom Line

This vegan, gluten-free and granulated sugar-free dessert is perfect for the whole family. You can also change its content as you wish. Both for ice cream and cookie dough.

You can use frozen berries instead of bananas. You can also use any chopped fruit as a topping.

You can add vegan candies to your cookie or increase/decrease the chocolate chips.

If you want crispy cookies, you can bake them for a short time in the oven. You don’t even need to use oil for this. Roll out all the cookies and place them on a baking paper-lined tray and bake for 20 minutes.

Just let them cool after baking so the ice cream can keep you cool.

This ice cream with cookie dough recipe is an amazing dessert to use your imagination. Enjoy!
