Now, I will share with you all the secrets of my best and favorite recipe. My white bean stew recipe is a stew that gets its flavor from beef pepperoni, its vitamins from marrow bones, and its protein from beans.

Even its crimson appearance is enough to raise appetites to the highest level. You can store it in the refrigerator for up to 3 days and serve it with cooked rice or boiled pasta.

Ingredients

  • 1 cup white beans
  • 4-5 oz. beef pepperoni
  • 1 1/2 tbsp. tomato paste
  • 1/2 tbsp. hot pepper paste
  • 1/2 onion (chopped)
  • 2 small pieces of veal marrow bones
  • 1 medium size fresh red pepper
  • 1 medium size fresh green pepper
  • 2 tbsp. butter
  • 3 tbsp. sunflower oil
  • 1 tbsp. paprika
  • 1 tbsp. pepper
  • Salt to taste

Instructions

  1. Take the white beans in a bowl, add enough hot water to cover them, and soak for at least 4 hours but preferably overnight. Chop the beef pepperoni into thick cubes. Chop the onion as finely as possible or mash it in a blender. Chop the red and green peppers into rings. Keep the chopped ingredients aside.
  2. Take the beans in a deep saucepan and boil for 20 minutes. Drain the beans that you boiled for 20 minutes and set them aside.
  3. Preheat a deep and large pan. First, add sunflower oil, then butter, and when the oils are heated, add the onions and fry for a while. Add chopped peppers after the onions and continue frying. Add paprika, salt, and pepper, and fry for a while. Finally, add the chopped pepperoni and continue frying. Then add hot pepper paste and tomato paste, and fry.
  4. Finally, add the pre-cooked white beans and fry them for the last time and for a short time. Add enough water to the pot to cover all the ingredients. Add 2 small veal marrow bones to this water and let the bones stay in the pot. Add salt to the pot at this stage according to your taste. Increase the heat, cover the pot’s lid, and let it boil.
  5. When the water boils completely, lower the heat and cook on low heat for 10 minutes. At the end of 10 minutes, take the bones out of the dish and continue to cook on low heat for another 40 minutes. When the water completely combines with the food and the white beans become soft, this means the meal is now ready. Turn off the stove and keep the lid of the pot closed for 15 minutes, and then you can serve.

Notes

  • While the beans are boiling, you will see white foam on them; remove this foam as much as possible with a colander.
  • All ingredients must be combined with beans in this final frying stage.

Vegan Version of the White Bean Stew

Continue all processes without butter, bone, and pepperoni. Just replace the sunflower oil with 4 or 5 tbsp instead of 3 tbsp. It will still be very tasty without pepperoni and butter.

We know that beef pepperoni, or Soujouk with its original name, is a little difficult to find. You can get it online or from Turkish butchers.

But the best way to go without them is to use diced beef.

But when you follow this path, the construction stages of the recipe will change a little.

Before starting to prepare, put the diced beef in the pot, add 1/4 cup of water to it, bring it to a boil, and when it starts to boil, reduce the heat and boil until the meat becomes tender.
