Fluffy & Soft Hamburger Bun Recipe (No Refined Sugar)

Soft Hamburger Bun Recipe: Pillowy, No Refined Sugar

Store-bought buns collapse under a juicy burger and taste like sweetened air. These homemade buns are pillowy, structured enough to hold a double patty with all the fixings, and sweetened only with a touch of honey instead of refined sugar.

The recipe yields 8 buns at roughly 180 calories each with 5 grams of protein. Expect a 2 hour timeline from mix to bake, most of it hands-off proofing. Worth every minute for the tender crumb, glossy top, and clean flavor that lets the burger star instead of competing with candy-sweet bread.

What Makes This Version Work

The softness comes from an enriched dough: whole milk, one egg, and butter worked into a bread flour base. Bread flour matters here.

Its 12 to 14 percent protein content builds the gluten network that gives buns structure without turning them dense, so they hold shape under a heavy patty yet stay tender in the bite. Honey feeds the yeast and browns beautifully in the oven, giving you that mahogany top without refined sugar.

Two rises are non-negotiable. The first develops flavor; the second develops the airy crumb. Do not rush either. An egg wash of one yolk plus a teaspoon of milk gives the signature glossy shine. Bake at 375 F for 15 to 18 minutes until the internal temperature hits 190 F.

Any less and the middle is doughy.

Prep Time 15 minutes
Baking Time 20 minutes
Dough Resting Time 1 hour 20 minutes
Total Time 1 hour 55 minutes

Ingredients

  • 3/4 cup whole milk
  • 1/4 cup water
  • 3 3/4 all-purpose flour
  • 1 egg
  • 1 1/2 tbsp. unsalted butter
  • 1 tbsp. honey
  • 2 1/3 tbsp. dry yeast
  • 1 tbsp. salt

Top:

  • 1/2 tbsp. honey
  • Sesame seeds
  • Water (50 ml)

Instructions

  1. Before you start, make sure to leave the butter at room temperature and let it soften. To begin preparing, heat the milk in a small saucepan. Add room-temperature water to the warmed milk.
  2. Bring a deep mixing bowl and add the milky water to the bowl. Add yeast to it, but do not mix. Add 1 tbsp of honey, and roughly mix them.
  3. Add only 2 cups of flour to it. Add salt to the top before mixing the flour with the milk and yeast. Slowly mix the salt with the flour as much as possible without touching the yeast. Add 1 egg.
  4. Cover the bowl with cling film. Then, place it in the oven with the door closed and turn it off.
  5. Leave the dough in this way in the oven for 50 minutes. After 50 minutes, take the dough out of the bowl. Place it on a cutting board and knead for at least 2 minutes, giving the round dough a slightly elongated shape, as shown in the following image: Soft Hamburger Bun Recipe
  6. Shape the dough before cutting it. Cut it in half first. Then divide it into 4 parts to obtain 8 dough balls. Shape all the balls into a smooth round shape, making sure the top side looks smooth: Soft Hamburger Bun Recipe
  7. Give them the final shape. Place them on a baking tray lined with parchment paper, leaving space between them. Cover it with a cloth and leave it like this for 20 minutes. Soft Hamburger Bun Recipe
  8. Put 1/2 tsp of honey in 50 ml of water and mix well.
  9. Remove the cloth from the dough that has rested for another 20 minutes and spread plenty of honey water on the dough. Soft Hamburger Bun Recipe
  10. Set the oven to 375°F and preheat.
  11. Finally, sprinkle sesame seeds on the dough: Soft Hamburger Bun Recipe
  12. And bake them in the preheated oven for about 15-20 minutes.
  13. Check the burger buns often, as each oven has different baking times.
  14. As the last and most important step, immediately cover the hamburger buns you take out of the oven with a cloth and let them rest for 10 minutes. Soft Hamburger Bun Recipe

Notes

  • Do not wrap the cling film on the bowl too tightly. Yeast activates better when there is heat. This way, the dough rises more, and you get softer bread when baked. For this reason, it is a great idea to rest the dough in a slightly heated and turned-off oven.
  • If it seems impossible to knead the dough, which is very sticky because it sticks to the hand too much, flour your hands a little and knead it this way.

Tips and Variations

Shape by pinching the dough into a tight ball, then flattening slightly with your palm to a 3.5 inch disc; they will double during proof and bake to a proper 4 inch bun. Sprinkle sesame seeds on the egg-washed tops for a classic look, or use poppy seeds and flaky salt for a bakery finish.

For brioche-style buns, add a second egg and increase butter to 6 tablespoons; the crumb turns richer and yellower. Whole wheat version: swap 1/3 of the bread flour for whole wheat flour and add an extra 2 tablespoons of milk to compensate for absorption.

Dairy-free bakers can use unsweetened oat milk and vegan butter with no loss of tenderness. For slider-size buns, divide the dough into 12 pieces and reduce baking time to 12 minutes.

Storage and Reheating

Store cooled buns in an airtight bag at room temperature for up to 3 days. Refrigeration ages the crumb fast, so avoid it. Freeze in a zip bag for up to 3 months and thaw at room temperature for 2 hours. To refresh, split the bun, brush the cut side with butter, and toast in a hot skillet for 90 seconds until golden. Microwave reheating turns them tough and gummy within 10 seconds; use the toaster or oven instead.
