Prep Time 15 minutes
Baking Time 20 minutes
Dough Resting Time 1 hour 20 minutes
Total Time 1 hour 55 minutes

Ingredients

  • Whole Milk (3/4)
  • Water (1/4 cup)
  • All-Purpose Flour (3 1/2 cup + 2 tbsp) or 475g
  • Egg (1 whole)
  • Unsalted butter (1 1/2 tbsp)
  • Honey (1 tbsp)
  • Dry yeast (2 1/3 tsp)
  • Salt (1 tsp)
  • Top:
  • Honey (1/2 tsp)
  • Sesame seeds
  • Water (50 ml)

Instructions

    • Before you start, make sure to leave the butter at room temperature and let it soften. To start preparing, heat the milk in a small saucepan. Add room-temperature water to the warmed milk.
    • Bring a deep mixing bowl and add the milky water to the bowl. Add yeast to it, but do not mix. Add 1 tbsp of honey, and mix them roughly.
    • Add only 2 cups of flour to it. Add salt to the top before mixing the flour with the milk and yeast. Mix the salt with the flour slowly and as much as possible without touching the yeast. Add 1 egg.
    • Mix all the ingredients in the mixing bowl. At the mixing stage, add all the remaining flour in a controlled manner. You will get a very soft, sticky dough and the dough should look just as soft and sticky as in the following image:

    • Form the dough into a large, smooth ball and leave it in the mixing bowl. Set the oven to 100°F. When the oven reaches this temperature, please turn it off and open the oven door. Cover the mixing bowl with cling film. Then put it in the oven with the door closed and turned off.
    • Leave the dough in this way for 50 minutes in the oven. After 50 minutes, take the dough out of the bowl. Place on a cutting board and knead for at least 2 minutes and give the round dough a slightly elongated shape as in the following image:

    • Shape the dough before cutting it. Cut it in half first. Then divide it into 4 parts and get 8 dough balls. Shape all the balls into a smooth round shape. Especially make sure the top side looks smooth:

    • Give them the final shape. Place them on a baking tray lined with parchment paper, leaving space between them. Cover it with a cloth and leave it like this for 20 minutes:

    • Put 1/2 tsp of honey in 50 ml of water and mix well.
    • Remove the cloth on the dough that has rested for another 20 minutes and spread plenty of honey water on the dough:

Set the oven to 375°F and preheat.

Finally, sprinkle sesame seeds on the dough:

And bake them in the preheated oven for about 15-20 minutes.

Check the burger buns often, as each oven has different baking times.

As the last and most important step, immediately cover the hamburger buns you take out of the oven with a cloth and let them rest for 10 minutes.

Notes

    • Do not wrap the cling film on the bowl too tightly.
    • Yeast activates better when there is heat. This way, the dough rises more, and you get softer bread when baked. For this reason, it is a great idea to rest the dough in a slightly heated and turned-off oven.
    • If it seems impossible to knead the dough, which is very sticky, because it sticks to the hand too much, flour your hands a little and knead this way.
