Ingredients

  • Banana (4 ripe, dark color)
  • All-purpose flour (211.5 g)
  • Baking powder (1/2 tsp)
  • Medium egg (2 whole)
  • Coconut oil (1/2 cup)
  • Sugar (100g)
  • Cinnamon (1/2 tsp, powdered)
  • Vanilla extract (1/2 tsp)
  • Thick and creamy or strained yogurt (2 tsp)
  • A pinch of salt to taste

Instructions

  1. Chop your ripe bananas and place them in a bowl. Mash them with a fork and set them aside. Mix the flour, baking powder, salt, and cinnamon separately. Keep this dry mixture aside. In another bowl, beat the eggs and sugar for 5 minutes, whisking until the mixture becomes foamy.
  2. Melt the coconut oil in a pan, add it to the sugar-egg mixture, and mix briefly. Add the mashed bananas to the mixture, but reserve 1-2 tablespoons of mashed banana for the topping.
  3. Next, add the yogurt and vanilla extract to the mixture. Finally, incorporate the dry ingredients (the flour and baking powder mixture) into the banana mixture. Mix well for the final time.
  4. Preheat the oven to 350°F (175°C).
  5. Grease a long, deep baking mold with coconut oil, butter, or olive oil. Carefully pour the bread mixture into the mold and smooth the top. Use the reserved mashed banana as a topping. Bake the banana bread in the preheated oven for 30-40 minutes, keeping a close eye on it to prevent burning.
