- 1/2 cup creamy no-sugar peanut butter
- 4 tbsp(Equiv 1/2 stick) unsalted butter/ softened
- 1/4 cup swerve confectioners sweetener
- 1/2 tsp vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- In a medium-sized container, mix the superfine blanched almond flour, no sugar peanut butter, softened butter, confectioner sweetener, and vanilla extract. You may use an electric hand mixer on low until all ingredients are well combined.
- Using a spatula, transfer your mixture and press it into a medium-sized square pan evenly.
- In a small microwave-safe container, place your sugar-free chocolate chips and microwave on high for about 30 seconds, then stir.
Remove from the microwave, and if any chips don’t melt, microwave again for 10 seconds and repeat the process until all the chips are completely melted. - Continue spreading the melted chocolate on top of your peanut butter mixture evenly. You can use a spatula to ensure all the mixture is covered.
- Transfer your keto peanut butter chocolate bars to the fridge to chill for about 1 to 2 hours or until the mixture is firm enough to cut.
