3/4 cup superfine blanched almond flour
1/2 cup creamy no-sugar peanut butter
4 tbsp(Equiv 1/2 stick) unsalted butter/ softened
1/4 cup swerve confectioners sweetener
1/2 tsp vanilla extract
1/2 cup sugar-free chocolate chips
Preparation:
Step 1:
In a medium-sized container, mix the superfine blanched almond flour, no sugar peanut butter, softened butter, confectioner sweetener and vanilla extract.
You may use an electric hand mixer on low until all ingredients are well combined.
Step 2:
Using a spatula, transfer your mixture and press into a medium-sized square pan evenly.
Step 3:
In a small microwave-safe container, place your sugar-free chocolate chips and microwave on high for about 30 seconds and then stir.
Remove from the microwave and if any chips didn’t melt, microwave again for 10 seconds and repeat the process until all the chips are completely melted.
Step 4:
Continue spreading the melted chocolate on top of your peanut butter mixture evenly. You can use a spatula to ensure all the mixture is covered.
Tip: At this point, you can also add crushed peanuts on top of the mixture before transferring it to the fridge to chill for that extra factor and crunch. This is optional.
Step 5:
Transfer your keto peanut butter chocolate bars to the fridge to chill for about 1 to 2 hours or until the mixture is formed enough to cut.
Step 6:
Remove your pan with the keto peanut butter chocolate bars from the fridge and cut them into 8 bars.
Tip: After removing the chilled pan, keep the keto peanut butter chocolate mixture at room temperature for about 10 minutes and run a knife under hot water before cutting them. This will make the cuts more precise and clean.
