The keto birthday cake recipe cake will keep you busy in the kitchen for ONLY 20 minutes and all the rest is yours. You can take care of all your other birthday to-do list while allowing the cake to rest for 1 hour. If you do not trust the cooling performance of your refrigerator, cool the cake for 2-3 hours.
For the topping, you can get help from a few fruits that are compatible with the keto diet. It both creates a more colorful topping and allows you to improve the flavor of the cake even more.
Feel free to use raspberries and strawberries for it. They are both delicious and keto friendly.
Ingredients
- Dark Chocolate (3.6 oz)
- Erythritol (1.5 tbsp)
- Heavy Cream (5 fl oz)
- Butter (3.5 tbsp)
- Hazelnut (3.5 oz)
- Almonds (10 tbsp, raw)
Instructions
Step 1.
Bring a small saucepan.
Add heavy cream and erythritol and cook while mixing.
Chop the dark chocolate.
Add the butter and chopped dark chocolate to the cream and continue to cook by mixing.
Mix them all and cook until all the ingredients are melted and combined.
Finally, add a pinch of salt and mix for the last time.
Keep the chocolate sauce aside.
Step 2.
Take the hazelnuts and raw almonds in a skillet and roast them.
Add a handful of raw pumpkin seeds if you wish.
Crush or chop the roasted nuts roughly with a knife.
Now add half of the nuts to the chocolate sauce and mix well with a wooden spoon.
Bring a springform cake tin to continue.
Pour the chocolate nuts mix into this tin and let it rest in the refrigerator for 1 hour.
Step 3.
Take the cake out of the refrigerator.
Sprinkle the remaining nuts on top.
If you want more colors for the topping, add some more pumpkin seeds.
Finally, sprinkle some sea salt on the cake.

- You don’t have to chop the dark chocolates very finely. A coarse chop will be enough as they will melt into the heavy cream anyway.
