  • 1/4 cup tapioca flour
  • Grated Zest of 1 lemon
  • 1/8 tsp. sea salt

  • 1/2 cup freshly squeezed lemon (You can get it by juicing about 4 lemons)
  • Grated zest (get it using one lemon)
  • 1/3 cup with 1 tbsp. raw honey
  • 1 tbsp. tapioca flour
  • 3 large eggs along with 1 yolk
  • 1/2 tsp. coconut flour

Instructions

  1. First, preheat your oven to 350°F. Line an 8 x 8-inch baking dish with parchment paper and spread butter across the bottom and sides.
  2. To make the crust, whisk all the ingredients until smooth. You can also use an electric mixer to blend everything well. Chill the mixture for 10 minutes.
  3. Press the crust mixture firmly into the bottom of the lined baking dish. Spread it evenly and poke it with a fork.
