Ingredients

For Bagel Dough

  • Almond flour (1.5 cups)
  • Mozzarella (1.7 cups, shredded) – You can also use white cheddar cheese instead
  • Cream cheese (2 tbsp)
  • Egg (1, medium)
  • Baking soda (1 tsp)

Topping

  • Sesame seeds (1 tsp)
  • Poppy seeds (0.2 tsp)
  • Egg (1, medium)
  • Flaxseed (0.5 tbsp, ground)
  • Salt

Instructions

  1. Start by grating the mozzarella and placing it in a large mixing bowl. Add cream cheese to it and mix. Then, melt them, which can be done in the microwave. Combine the melted cheeses by mixing them well.
  2. In a separate mixing bowl, add the almond flour and baking soda and mix. Then, pour the flour mixture over the cheese mixture. Add an egg, mix, and knead the ingredients well until it forms a dough. Although this process will take some time, they will eventually be combined. At the end of the mixing process, you will have a soft dough.
  3. Preheat the oven to 200°C / 392°F. Line a baking tray with parchment paper. Divide the dough into 4 equal parts and form them into smooth round shapes. Then, make a hole in the center of each dough with your finger. Arrange them on the parchment paper, leaving spaces between them.
  4. Mix all the seeds in a small bowl. Separate the yolk from the white of 1 egg and beat the yolk. Mix all the seeds with the beaten egg yolk. Then, spread it on the bagels with the help of a brush. Bake for 15 minutes, and let them cool down a bit. Then, the low-carb bagels are ready to serve.

Notes

  1. Be sure to use a non-stick surface when kneading the dough.
  2. You can also use a wooden spoon handle to pierce the center of the bagels.
