Ingredients: 6 servings (1/2 cup each serving)
4 large eggs
1 cup half and half cream
1/2 cup heavy cream
1/4 cup monk fruit sugar sweetener
1/4 tsp ground nutmeg (plus some more to garnish dessert)
Preparation: 10 minutes
In a blender, start by mixing the large eggs, half and half cream, heavy cream, monk fruit sweetener and ground nutmeg.
Combine the ingredients at low speed, being careful not to make a frequent stop to avoid any air from getting into the mixture.
Transfer and divide your mixture to a 6-cup microwave-safe bowl.
Tip: It is recommended to use clear glass containers to cook in the microwave as they are easier to check once they are cooked or not.
Place your keto eggnog dessert into the microwave and cook at 50 percent power for about 4 to 5 minutes. Stir your keto eggnog slowly.
Place your keto eggnog back in the microwave to cook for an additional 3 to 4 minutes. Once cooked stir until your keto eggnog is a nice and smooth texture.
