Microwave Keto Eggnog Recipe

No need to run out and try to beat the holiday rush. This holiday classic, made in the microwave will surprise you and the family in the best way.

It will be so easy to fall in love with it, knowing it is sugar-free and keto-friendly.

Although we know no one is really worried about their weight during the holidays, the microwave keto eggnog recipe will be nice for a chance to have a dessert low in calories. Try it for yourself.

Ingredients

  • 4 large eggs
  • 1 cup half-and-half cream
  • 1/2 cup heavy cream
  • 1/4 cup monk fruit sugar sweetener
  • 1/4 tsp ground nutmeg (plus some more to garnish dessert)

Instructions

Step 1:

In a blender, start by mixing the large eggs, half and half cream, heavy cream, monk fruit sweetener and ground nutmeg.

Combine the ingredients at low speed, being careful not to make a frequent stop to avoid any air from getting into the mixture.

Step 2:

Transfer and divide your mixture to a 6-cup microwave-safe bowl.

Step 3:

Place your keto eggnog dessert into the microwave and cook at 50 percent power for about 4 to 5 minutes. Stir your keto eggnog slowly.

Place your keto eggnog back in the microwave to cook for an additional 3 to 4 minutes. Once cooked stir until your keto eggnog is a nice and smooth texture.

Step 4:

Serve your keto eggnog warm or you can also chill it and serve when cold. Each serving should be garnished with a little ground nutmeg for the final touch. Bon appetit!

Notes

  • I recommended using clear glass containers to cook in the microwave as they are easier to check once they are cooked or not.
  • The secret is to set the microwave to 50 % cooking speed to not overcook the mixture. If you do overcook it, just blend again to get rid of any clumps and it’s back to smooth texture. Oh, yeah… don’t tell anyone!
