- 1 3/4 cups chickpeas (cooked)
- 1 3/4 cups couscous
- 1/2 red onion
- 3 garlic cloves
- 1 tsp. tamari
- 1 tsp. paprika tsp
- 2 tsp. dried parsley
- Salt and pepper to taste
Meatball Sauce Ingredients
- 2 tsp. soy sauce
- 2 tsp. brown sugar
- 4 tsp. hot sauce
- 2 tsp. water
- 1 tsp. cornstarch
Instructions
- Put the raw couscous in a deep mixing bowl and add enough hot water to cover it.
- Cover the bowl with a cloth and a lid, then let it sit until it absorbs the water and swells.
- Put chickpeas, garlic cloves, half an onion, parsley, paprika, tamari, salt, and pepper into a food processor. Pulse until combined.
- You should now have a mixture that resembles dough and can be shaped.
- Preheat the oven to 200°C (390°F).
- Break off pieces of the mixture the size of meatballs and roll them with your hands.
- Grease a tray with very little oil. Place the meatballs on the baking tray, then bake for 30 minutes.
- Heat a wok pan, pour in hot sauce, add soy sauce, some black pepper, brown sugar, and cornstarch. Cook briefly, then add the meatballs from the oven to the sauce.
- Mix well and garnish with scallions or chopped fresh parsley.
