Recipe – 10min prep / 10min cooking time

Wash the zucchini well, peel it into strips, and grate it.

Tip: The grating step of the zucchini is very important. At this step, you need to squeeze the juice thoroughly after grating it.

Now put the grated zucchini in a deep bowl.

Crack an egg, beat it, and add it to the zucchini.

Then add parsley, almond flour, and some black pepper.

Mix well.

Preheat a non-stick pan on the smallest eye of the stove.

Add 1/2 tbsp of olive oil to the pan.

After the olive oil is heated, add the zucchini mix to it, spread it in the pan and fry it first on low heat, then by increasing the heat until brown.

Recommendation: Keep the lid of the pan closed while the pizza base is frying. In this way, you will get the heat to all parts of the pizza.

If the pizza base moves as a whole when you shake the pan lightly and the cooked side turns golden brown, turn it upside down now.

Add the remaining 1/2 tbsp of olive oil to the pan before upside-down.

If you’re a beginner, lift the pizza base with a fork to turn it over, place a colander underneath, and turn it over.

You can now place the toppings.

To continue preparing, first spread the shredded cheese on the pizza.

Sprinkle paprika, salt, and pepper.

Then arrange the thoroughly washed baby spinach leaves.

Finally, arrange the sliced cherry tomatoes.

Cover the pan and let it cook until the bottom is golden brown and the cheeses are completely melted.

Now take the zucchini pizza on a large plate.

Slice into 4 equal parts like pizza.

Let it cool down a bit and serve.

Is a Vegan Version Possible?

For this pizza, whether you are vegan or not, you can change the topping as you wish, provided that it is compatible with the keto diet.

But what about egg replacement? For the vegan version of the pan-fried zucchini pizza, you’ll need flaxseeds. But a dry flaxseed will have to go through a process as it doesn’t give the consistency of an egg.

To prepare it, put 1 tbsp of ground raw flaxseed in a bowl, add 1.5 tbsp of water to it and mix. You can use this mixture as an egg replacement on the pizza.

Bon appétit!
