Prep Time 35 minutes
Cook Time 10 minutes
Total Time 45 minutes

Ingredients

  • Almond flour (1 ½ cups)
  • Vanilla extract (Pure, 1 tsp)
  • Confectioners swerve (½ cup)
  • Salted butter (110 g / 1 stick)
  • Walnuts (1 cup)
  • Coconut flour (1 tbsp)
  • Confectioners swerve for topping (⅔ cup)
  • Salt (Pinch of)

Instructions

Step 1.

First of all, preheat the oven as you do with all cookies, cakes, and baked meals.

Degree: 325°F / 160°C

Then, get the food processor.

Put your walnuts in it and let it crumble.

Do not turn off the process until your walnuts become extra fine.

Tip: Those who are not feeling fine with walnuts can use pecans instead.

Step 2.

Now take a mixing bowl and put butter in it.

Tip: Use a glass bowl instead of a plastic one so it doesn’t adversely affect the taste of your cookies.

Don’t melt the butter, but be sure to leave it outside rather than in the fridge.

Sprinkle the confectioners swerve over the butter and mix with a hand mixer.

You will see that you get a perfect cream.

Reminding: Use half a cup of confectioners swerve in this step.

We’ll use the rest to dip the cookies in the last steps.

Step 3.

Add the chopped walnuts to the creamed mixture.

Then add almond flour, coconut flour, vanilla extract, and a pinch of salt.

Using a spatula or spoon, mix the ingredients well until combined.

You have obtained a dough that is not hard.

Now cover the dough and let it rest in the refrigerator for 20 minutes.

Step 4.

Take out the dough in the refrigerator.

Shape it into a half golf ball size round.

Obtain 40 balls.

Place the balls you have obtained on a parchment paper-lined baking tray.

Now put them back in the fridge and let them sit for another 15 more minutes.

Step 5.

Put the snowballs, which you have rested in the refrigerator, in the oven and bake for only 10-12 minutes.

Warning: Do not give up control at this step.

Bake them only until the tops are golden brown, as we want to get a fluffy cookie.

Take care not to burn them.

Step 6.

After the cookies are baked, take them out of the oven and let them rest on the side.

Tip: Never move them at this step for a while.

Bring a small and deep mixing bowl at this step and pour the remaining confectioners swerve into it.

While the cookies are still warm, dip them one by one into the confectioners swerve.

Tip: Make sure this powdered sweetener touches every part of the cookie.
