Ingredients

For Dough

  • 3 cups of almond flour
  • 3/4 cups of coconut flour
  • 3 tablespoons of psyllium husk
  • 1 teaspoon of baking powder
  • 1 teaspoon of xanthan gum
  • 3 eggs
  • 1.7 oz. almond milk (unsweetened)
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of vinegar
  • 1/4 cup of butter (salted and melted)
  • Salt

Filling 1 - Cheese Filling

  • 1 cup of shredded cheese
  • 1.7 oz. butter (unsalted)1 tablespoon of sugar

Filling 2 - Chocolate Filling

  • 110 grams of dark chocolate (90%)
  • 3 tablespoons of almond milk

Instructions

Step 1

First, start by getting a deep mixing bowl. We will prepare the dry and wet ingredients separately and combine them in this big bowl.

Start by taking the almond flour into the mixing bowl. Pour the coconut flour over it.

Then add baking powder, xanthan gum, salt, and psyllium husk to mix well until all the ingredients are combined.

Set it aside.

Step 2

Now, take another mixing bowl slightly smaller than that. We will prepare the wet ingredients in it.

Start by taking the eggs and breaking them into the bowl.

Add vanilla extract to continue preparation.

Then add the almond milk and melted salted butter.

Mix it all well for a minute.

Step 3

In the third step, we will bring together dry and wet mixtures.

For the main bowl, we will use the large bowl with the dry mixture.

Now, combine the liquid mixture that you have mixed well with the solid mixture, and ensure that all the ingredients are mixed with the help of a spatula or spoon.

If it’s all wet enough, start kneading using your hands. Don’t worry. This won’t take long. 1-2 minutes will be enough for kneading.

In the end, collect the dough on one side of the bowl and let it rest for 15 minutes.

Step 4

Now, it’s time to fill the Spanish bread. We will give you 2 different keto-friendly filling recipes.

If you wish, you can fill half of the bread with the sweet one and the other half with cheese. You can also fill it with just the cheese if you want.

You can even fill it with only the chocolate, and you can even leave the inside of the bread empty if you wish. It’s all about your taste.

Now get a small bowl and choose a fatty cheese-like white cheddar to prepare the filling and grate it into this bowl. Melt the grated cheese using the microwave or double boiler.

As soon as the cheeses melt, that is, while they are still very hot, put butter on them and mix them by mashing until the butter melts due to the heat of the cheeses.

At this stage, if you wish, add 1 tablespoon of sugar and continue mixing. This is optional. Set this bowl aside together with the dough.

Step 5

Break the dark chocolate into a bowl. Add almond milk to it and melt it in the microwave. Mix it well and set it aside, too.

Step 6

Take the dough and divide it into 14 equal parts. Give them the shape of a circle.

Press on the balls to give them a flat shape, cover them with cling film (so they won’t stick to the rolling pin) and roll them out to the size of your hand with a rolling pin.

Spread the cheese or chocolate filling on it and roll it.

Gently close the ends of the dough so that the filling does not spill out during baking. Repeat the procedure until the dough is done.

Step 7

Dip the dough you rolled into the almond flour in a bowl and place it on the baking tray covered with parchment paper.

Bake in the preheated oven at 180 degrees for 25 minutes. Voila!
