Oatmeal Chocolate Muffins Recipe (Gluten-Free)

This was one of the first recipes I tried when I began focusing on healthier eating. I made the change not only for my overall well-being but also because of my role as a personal trainer specializing in strength and conditioning.

I’ve always had a bit of a sweet tooth, especially in the mornings, so this recipe was the perfect way to start transforming my habits. These banana cacao cupcakes are quick to prepare, satisfy that sweet craving, and are packed with wholesome ingredients that fuel my day.

These banana cacao cupcakes are a delicious, healthy option to satisfy your morning sweet cravings. Packed with wholesome ingredients like oatmeal, cacao, and walnuts, they’re quick to make and perfect for starting your day on the right note.

Total Time 55 minutes

Ingredients

  • 4 Eggs (medium)
  • 1 cup oatmeal (Gluten-free)
  • 2 tbsp. cacao powder
  • 4 sachets of stevia
  • 2 bananas

To Garnish

  • 4 tbsp. walnuts
  • 2 tbsp. peanut butter

Kitchen Utensils

  • Cupcake Molds
  • Oven

Instructions

    1. In a blender combine the eggs, banana, oatmeal, cacao powder and stevia.
    2. Blend until a smooth texture is formed.
    3. Preheat the oven to 180C.
    4. Place the cupcake molds in a tray.
    5. Fill ¾ of the molds with the mixture from the blender.
    6. Chop and add the walnuts in each cupcake mold.
    7. Cook the cupcakes for 15 minutes.
    8. Let the cupcakes cool for 5 minutes and add the peanut butter on top to serve them
