The Gingerbread Man Recipe is the best gluten and refined sugar-free cookie recipe ever! You’ll need 9 main ingredients, and you’ll only need 20 minutes of cooling time. Quite simply, it's delicious and utterly FUN TO MAKE! Here is the gingerbread man recipe that gives perfect results every time!

Ingredients

  • Oat flour (1 cup)
  • Buckwheat flour (1 tbsp less than 1 cup)
  • Cinnamon (1 tsp)
  • Ginger (1 tsp)
  • Grape molasses (1.6 fl oz)
  • Date juice or sweetener (1.6 fl oz)
  • Butter (5 tbsp, softened)
  • Egg (1, medium)
  • Baking soda (Little less than 1 tsp)

For Decoration – Optional

  • Icing sugar (1 pack)
  • Egg white (1 egg)
  • Erythritol (5 tbsp)
  • Lemon juice (1 1/2 tsp)

Instructions

  1. Mix the softened butter, date juice, egg, and molasses in a bowl. Add the remaining dry ingredients and knead well.
  2. Then, rest the dough in the refrigerator for 20 minutes. Meanwhile, preheat the oven to 170°C / 340°F. At the end of 20 minutes, lay parchment paper on the counter, put the cookie dough on it, and place another parchment paper on top.
  3. Then, roll out the dough with a rolling pin until it's about 1 cm thick. Cut the dough with cookie molds and place them on a baking tray. You can shape your cookies however you want. Here's a tip: Put some oat flour in a deep bowl. Dip the cookie molds in this flour before shaping the dough to prevent sticking and shape the cookies better.
  4. Bake in the preheated oven for 18 minutes. Allow them to cool when they come out of the oven; they will firm up slightly.
  5. For decoration, whisk all the ingredients for the decor for 5 minutes. Transfer it to a piping bag and decorate your cookies as you wish.

Notes

Those who do not like the taste of ginger can omit it from the recipe list. Before the cookies are baked, and after you shape them with cookie molds, you can make buttons by making holes in your Gingerbread Man's with a toothpick.

Baking time is provided for an average oven, but 18 minutes of baking time may be too short or too long for your oven. For this reason, bake cookies in a controlled manner.

Bake in the oven for 17-18 minutes on the upper heat. They will cool and become drier after they come out of the oven.
