Ingredients

  • Oat flour (1 cup)
  • Buckwheat flour (1 tbsp less than 1 cup)
  • Cinnamon (1 tsp)
  • Ginger (1 tsp)
  • Grape molasses (1.6 fl oz)
  • Date juice or sweetener (1.6 fl oz)
  • Butter (5 tbsp, softened)
  • Egg (1, medium)
  • Baking soda (Little less than 1 tsp)

For Decoration – Optional

  • Icing sugar (1 pack)
  • Egg white (1 egg)
  • Erythritol (5 tbsp)
  • Lemon juice (1 1/2 tsp)

Instructions

Step 1

Mix the softened butter, date juice, egg, and molasses in a bowl. Add the remaining dry ingredients and knead well. Then rest the dough in the refrigerator for 20 minutes.

Meanwhile, preheat the oven.

Oven Temperature: 170°C / 340°F

Step 2

At the end of 20 minutes, lay the parchment paper on the counter, put the cookie dough on it, and put another parchment paper on top. Then thin the dough with the help of a rolling pin. Thinning to a thickness of 1 cm will be sufficient. Cut the dough with cookie molds and place it on the baking tray. You can shape your cookies however you want. Let me just share a little tip here:

Take some oat flour and put it in a deep bowl. Dip the cookie molds in this flour, so be sure to flour the molds before shaping the dough.
