Low Fat Pumpkin Pizza Recipe

Low-Fat Pumpkin Pizza (9g Fat, 8 Slices)

This is a homemade pizza where roasted pumpkin puree replaces most of the cheese, cutting the fat load to just 9g per slice while keeping the pizza satisfying and creamy. Each slice runs about 210 calories with 8g of protein and 3g of fiber. It fits a low-fat pattern for anyone managing gallbladder issues, elevated cholesterol, or just trying to add more vegetables to a favorite comfort food.

Why This Recipe Works

Pumpkin puree acts like a low-fat cream sauce base. Its natural sweetness balances the acidity of tomato sauce, and its silky texture spreads across the dough like ricotta but with a fraction of the fat. Roasting fresh pumpkin at 400F for 30 minutes concentrates its flavor and drives off water so the pizza doesn’t turn soggy; canned pumpkin puree works in a pinch but has a slightly one-note flavor. A thin whole wheat crust rolled to 1/4 inch gives you a crisp foundation that supports the toppings without collapsing. Red pepper and dill in the sauce is the signature flavor twist; it sounds unusual but the sweet-warm red pepper and grassy dill lift the pumpkin from baby-food territory into savory pizza territory.

  5. Arrange the pumpkins mixed with oil and spices on a parchment-lined tray so that they do not overlap.

Ingredient Notes

Use sugar pumpkin (also called pie pumpkin) for the best flavor; the large jack-o-lantern types are watery and bland. If using canned, Libby’s 100% Pure Pumpkin is the standard; skip anything labeled pumpkin pie filling which contains added sugar and spices. Whole wheat pizza dough from Trader Joe’s or a fresh bakery works well; make sure it comes to room temperature for 30 minutes before rolling so it stretches without tearing. Part-skim mozzarella at 3 ounces per pizza gives just enough cheesy pull without pushing the fat count. Fresh dill from a small packet, not dried, and a good sweet paprika or ground Aleppo pepper make up the sauce.

Tips and Variations

Preheat the oven and a pizza stone or heavy baking sheet at 475F for a full 30 minutes; a properly hot surface is what gives you a crisp crust in a home oven. Whisk the pumpkin puree with 2 tablespoons of olive oil, 1 teaspoon of paprika, 1/4 teaspoon of dill, salt, and a squeeze of lemon before spreading. Leave a 1-inch border for the crust. Top with a thin scatter of part-skim mozzarella, roasted red pepper strips, and sliced red onion. Bake 10 to 12 minutes until the crust edges are deeply golden. For a side, dice 3 medium potatoes, toss with 1 tablespoon of olive oil and paprika, thyme, and black pepper, and roast at 425F for 30 minutes. For a vegan version, skip the cheese and add nutritional yeast or a drizzle of tahini after baking. For a higher-protein variation, add grilled chicken strips or crumbled feta.

Storage and Reheating

Refrigerate leftover slices in a sealed container for up to 3 days. Reheat in a 400F oven or air fryer for 5 minutes to bring back crispness; the microwave will make the crust rubbery. Freezes well for 2 months; wrap individual slices in foil, then bag. Reheat frozen slices at 400F for 12 minutes, no thaw needed.
