Although it is a bit of a challenge to prepare stuffed artichokes, it is one of the indispensable vegan dishes with its irresistible visual appeal and unforgettable taste even after eating. It’s indeed a bit of a long process, but believe me, it will be worth it.
First, thoroughly wash the artichokes in cold water, cleaning the spaces between the leaves well. Cut off the stems and wash them once more. Trim off some of the outer leaves.
Lay the artichokes on their side and trim about 2 inches from the head. Remove a few rows of leaves from the middle. Use a spoon to remove the hairy part of the heart.
Place the cleaned artichokes in a bowl of water mixed with lemon juice and let them soak for a while.
In a bowl, mix all the ingredients for the stuffing. Stuff the artichokes with this mixture. Place the stuffed artichokes in a pot and add water and olive oil.
Cover the pot with a lid and cook on the stove. Once boiling, reduce the heat and simmer until the leaves are soft and the rice is cooked.
Turn off the stove and let the stuffed artichokes cool in the pot. Transfer them to a serving plate and drizzle olive oil over them. Garnish with chopped dill before serving. Enjoy your stuffed artichokes!
Notes
Remove any excess or damaged leaves from the artichokes. You can also trim the leaves as desired for presentation.
For added flavor, feel free to incorporate dry and fresh spices into the stuffing filling.
For an attractive presentation, consider placing some of the filling between the intermediate leaves of the artichokes before cooking. This will create a visually appealing dish once cooked.
