Once you savor it, you'll discover it's on par with a restaurant renowned for oven-roasted chicken skewers. Additionally, it constitutes a relatively light meal. Consume plenty of green salad with it; if you have a keto tortilla, heat it in a large skillet and serve it with chicken skewers.
Grate a large onion, squeeze out the juice, and add only the juice of the onion to a large bowl. Grate the garlic and add it to the bowl. Add 10 tbsp of olive oil, Greek yogurt, salt, and all the spices, and mix well. Add the diced chicken breasts and mix thoroughly. Cover this bowl with cling film and leave it in the refrigerator for at least 1 hour.
Chop all the vegetables in the other ingredients except mushrooms into medium thicknesses and sizes. Mix these vegetables with 2 tbsp olive oil, salt, and pepper.
Preheat the oven to 180°C / 356°F.
Thread the skewers alternately with mushrooms, vegetables, and chicken. Continue until all the ingredients are used up. Line a baking tray with baking paper. Place this tray in the middle of the oven and place an oven wire rack on it. Arrange skewers on the wire rack, then bake for 20-25 minutes and serve.

The marinating process is one of the most critical steps of a chicken dish. The longer you let it sit, the tastier the dish will be. If you don’t have a time limit, put the chicken in the fridge the night before and let it marinate. Soaking your skewers in a water bowl for an hour prevents them from darkening while baking.
