1medium ripe bananafresh or frozen (about 120 g / 4 oz)
2cupsunsweetened almond milk480 ml / 16 fl oz
2scoops plant-based vanilla protein powder40 g; pea, soy, or blend
1tablespoonground flaxseed or chia seed7 g
1/2teaspoonvanilla extract
1tablespoonfresh lemon juice15 ml
Optional Add-Ins
1tablespoonalmond butter or peanut butterfor extra healthy fat (16 g)
1pitted datefor a natural sweetness boost if berries are tart
1/2cupfresh baby spinachfor extra micronutrients (15 g; nearly invisible in taste)
1teaspoonmatcha powder or 1 tablespoon raw cacaofor flavor variations (3 g)
Instructions
Pour the almond milk into the blender first. Liquid at the base helps the blades catch the frozen berries.
Add the banana, lemon juice, vanilla extract, protein powder, and ground flaxseed. Blend on low for 10 seconds to hydrate the powder.
Add the frozen berries on top. Blend on low for 15 seconds to break them up, then increase to high for 45 to 60 seconds until the smoothie is smooth and thick. Scrape down once if needed.
Taste. If it is too tart, blend in a pitted date. If it is too thick, add a splash more almond milk.
Pour into two chilled 12 oz glasses. Top with a few extra fresh berries or a sprinkle of granola. Serve immediately.
Notes
Green Berry Variation: To sneak in a serving of greens without shifting the flavor, blend 1/2 cup fresh baby spinach with the almond milk first for 20 seconds, then add the rest of the ingredients. The color shifts to a deep purple-green and no one at the table will know.
