In a medium pan on low heat add your strawberries and cook until soft and you see liquid evaporating. This will take about 10 minutes to accomplish. Releasing the liquid from the strawberries will make our treat naturally sweeter and yummy. Tip: Move the mixture continuously over a low flame so it doesn’t stick to the pan.
When the strawberries are done being caramelized, add the juice of your lime and use it to pick up any leftover strawberries from the pan to make sure it all gets scooped out to the blender. Set aside.
In a blender, add your non-fat yogurt, low-fat yogurt, strawberry mix, monk fruit sweetener, vanilla extract, and salt and mix until well combined.
Line a baking tray with parchment paper and pour the yogurt mixture on top. Spread the mixture depending on how thick you want your bark to be when frozen. Tip: I recommend the thickness no more than 1/2 inch; otherwise difficult to bite right off.
Add your berries on top and disperse them all over your spark to make them sparkle. At this point, you can add your dried coconut on top and place it in your freezer for 4 hours or overnight.
Remove your sugar free frozen yogurt and use a sharp knife to break the bark into smaller pieces. After cutting all the pieces, you can store them in gallon-size freezer bags.
