A refreshing, low-calorie cucumber and ginger juice with lemon and mint. About 25 kcal per 8 oz glass. Made by blending and straining, or with a cold-press juicer.
1teaspoonraw honey or maple syrupif you want a hint of sweetness (7 g)
2tablespoonsunsweetened green apple juice for a lightersweeter finish (30 ml)
1dash cayenne pepper for warmth
Instructions
Scrub the cucumber under cold running water. Leave the skin on for the fiber and light green color. Cut off the ends and chop into 1-inch chunks.
Peel the ginger by scraping the skin off with the edge of a spoon; this wastes less than a knife peel. Grate on a fine microplane or chop small so it breaks down in the blender.
Add the cucumber, ginger, lemon juice, mint, water, and salt to a high-power blender. Blend on high for 30 to 45 seconds until fully liquefied.
Place a fine-mesh sieve over a large bowl or measuring jug. Pour the mixture through the sieve, pressing gently with the back of a spoon to release liquid without forcing through pulp.
Taste. If it feels sharp, stir in the optional honey or apple juice one teaspoon at a time.
Pour over ice into two chilled 8 oz glasses. Garnish with a cucumber ribbon or a mint sprig. Serve immediately for peak flavor and vitamin C retention.
Notes
Cold-Press Method (Optional): If you own a masticating or centrifugal juicer, feed the cucumber, ginger, and one halved lemon (peel removed) through the chute according to the manufacturer's instructions. Skip the water and mint at the juicing stage.
